Power = speed/acceleration
Range = energy stored

Does not matter how you arrange the cells.  If a battery can do 1Kw(power) and store 1Kw/hr(energy) does not matter how you arrange them.

Only thing volts gets you is smaller connectors and better use of DC fast charge systems, but a boost converter from vicor get you 4:1 voltage conversion have over 1kw per 1inch^2 density, so you could go easy 400v to 100v for charging.

If you have winding control over the motor, the total current in the tooth is the same if you have one set of wires with 100amps on it or 100wires with 1 amp on it, the trq will be the same.  The total amount of copper the electrons are pushing though is the same.

"Battery voltage is decided, going to stay quiet about it for now, voltage tells a lot about a power system."
Power = volts * amps.  Does not matter what your voltage is.  The power bus on a motorcycle is only few feet at most.  Does not matter if the cells are in parallel or series they still have the same power.

Low voltage = safety for users/dealers/hackers

I cannot say exactly how I know this.   :-X

I do know that if the powertank module voltage is higher then the monolith that it will cause issues with the motor drive.  Once the powertank is in a tracking the same SoC and voltage of the main battery there is no issue.

MY15 FX is awesome.  Good suspension and brakes.  A lot of things worked out and solid platform.  I love my 14 FX.  It has been far more reliable then my two fuel bikes.  I know my Zero will turn on in the morning and make it to work.  In the past month I have had two batteries and a regulator/rectifier go out in my KTM 990 adv.  Damn fuel bikes have batteries and fuel systems to go wrong.

1. If i were to run out of battery in the woods and have my friend tow me back, but i kept it on so it regen braked some energy back in, would this mess anything up?
No it will not mess anything up.  You could actually put energy back into the system with regen while being pulled.  I can gain a few % on my FX going down a long hill.

7. I took it down to 0% and it said it had 3 miles left on it. Does the bike have a limp mode to warn you that it is REALLY DEAD but lets you make it just a bit farther? Or does it just shut off?
When you hit 0% it does not just shut off.  As you get lower in the SOC the bike will start to cutback power so you don't hurt the cells by being able to pull full current near the end of charge.  At 20% you will feel it.  At 10% you really will feel it and at 0% you may not be able to go over 40MPH.  When a cell gets too low then the bike will shutdown.  So when you get low just try not to punch it.  If you make a cells voltage get to low it will trigger the shutdown.

I don't know if this thread is still valid, but when you install a power tank the main bike battery needs to be at 100% full charge.  If the power tank makes it into the system with a higher state of charge the motor drive will not enable.
