How does that plastic fender with the hole in the center protect you from spray?

Draw a line tangent to the wheel the tail.  The line would never hit your back.  They you have to consider that any motion forward would make the spray from the tire go back like a rooster tail.

Spray on your back is probably coming from other vehicles or your front tire and the air turbulence is depositing  the spray and grit on your back.  Think how the back of a car gets dusty on a long trip.

That is my guess.  I would like to see some video of the spray getting around the tail to your back from the wheel.
