I get this a lot with smaller animals like squirrels and rabbits, but haven't encountered deer yet. None of them panic, and they do notice, thankfully calmly.

No video but I had a young buck run along a fence as I went down a farm road.
When I came back up the road about 1 min later he started off running along the road so I'm down to like 20MPH (midnight by the way) than he runs out and gets right in front of the bike.
He starts zig zaging right in front of my front wheel about 6 inches off. He crossed me about five times.
I swear I think he just wanted to play but he had my heart racing.
I have counted 9 in one night on my 40 mile route so far no contact.
Almost as bad are all the armadillos which are just walking speed bumps.

I had the same thing happened near my home, around 1 pm.  As I was riding home a deer was walking in the middle of the street of my "ticky tacky" subdivision.  I rode up near its butt and honked my horn. It then looked back and picked up the pace a little.  So did I and gave it another couple of toots on my horn.  After about 100 yards of hogging the middle of the street, the deer veered off to the left and headed for someone's garden for lunch and I was able to continue home without further interruption or delays due to animal sightings on paved public streets.
