My FXS 2016 6.5kWh is given for 3.8s.
But with the battery fully charged and after several attempts, my best time was 4.87s for 0-60 mph, 5.14s for 0-100 km/h, and 10.2s for 0-137 km/h (max speed).
I am weighting around 70 kgs.

It seems that Zero's times are very optimistic !

Zero wouldn't be the first manufacturer to advertise performance claims that are tough to duplicate in the real world.  However, I will say that I am impressed that Zero's range claims are pretty close to what most of their customers seem to achieve.

I have added to my bike calculator a section for computing the theoretical acceleration :o
See attached

Of course, it assumes a lot of unrealistic things, mainly:
- constant torque in all the range of speed
- no losses in the transmission
- no forces opposed to the progression (i.e. the bike is in vacuum  ;D, the tires do not waste any energy)
- only the translational kinetic energy is considered (the rotational kinetic energy accumulated by the wheels is neglected)

On most ev’s at a certain speed the hp stays the same and the torque decreases. (When accelerating)

I think there is a mistake - the size of a tire is the external radius. So you dont need to add the tire's width...

Technical data of a 2017 DSR

Peak power: 69PS (52kW)
Continuous power: 30PS (22kW)

The acceleration values that Zero indicates can only be reached once anyway because then the engine is too hot.
Only when the engine has cooled down you can try again.
With a higher voltage all this would be better!! A 750A controller only produces heat.

For 0 - 60 times (ie 3 seconds) I suppose we can assume peak torque will be continuously available...

And how is that supposed to work if the engine has already reached a temperature of over 200 F? :o
