I think the stock seat is fine.  Its not like you are sitting on it for that long anyway.

...then paid an upholstery shop to install it

The one order from Amazon is sufficient to do front & rear sections of the seat.

I agree.  The longest I've ridden my Zero in a day is 90 miles.  Motorcycle manufacturers in general, and Zero in particular, cheap out on seats, and it's pretty common for people with an interest in comfort to use an aftermarket solution.  That arrangement is just fine with me, as it keeps costs down and the seat doesn't bother me.

16' SR, stock seats suck and are very uncomfortable. Had them redone by local seat shop, much better with gel pads and more foams.

I got my 15' SR used already with a corbin seat installed, so I've never used the stock seat. The corbin seat isn't amazing, but it's perfectly comfortable to ride right down to 0%, so it's definitely good enough for me. I have the stock seat but have never sat in it, but I can see and feel that it has less cushion and is going to overall be a firmer seat.
