I just got a 2021 SR/F last week. Took a couple days (and several emails) for Zero to get me registered, but that was finally sorted.
I've logged in with the Next Gen app and have paired with the bike: I can see battery stats, SoC, etc. So I think I'm good there.
If I go into Performance, I can see the modes listed, and I'm able to create new modes. This is where things go pear-shaped.
All new rides are created with the settings shown in the attachment (as well as Dark Green theme). I can move the sliders, change traction control, and pick different themes while in this view; however, Save and Update does neither. The new mode shows in the list of Inactive Custom Modes, but it has the original settings.
I've tried Edit Ride Mode while still in the inactive list, and I've tried Make Active followed by Edit Ride Mode while in the active mode slot. Changes aren't saved.
I've sent a video of what's going on to my dealer as well as Zero. Neither have an answer at this point.
Any experience with this here?

If you scroll to the bottom, is 'Demo Mode' selected, or not?
You can have more ride modes than are enabled on the 'F platform', too.
I haven't seen the app in person, tho.

In the app, under Settings, at the top, Demo Mode is deselected (turned off). Not sure about that showing at the bottom anywhere (it's not under the ride modes list or in the settings for a mode).

2021 SR/S
I’ve had the same exact problem. It seems like it’s a glitch with the app.

Well, it's changed position in the app before, but that one has gotten me a coule times (usually when there's an app refresh).
I wonder if they forgot their commit button or something?

Did you try adding a name of at least 3 characters? And then check if saving that mode does any good.

A name of 3 characters didn’t work, 4 characters didn’t work, but 5 characters worked!
I double and triple checked and it would appear that you need at least 5 characters for the save and update button to work.
Thank you so much!

Update: now it’s refusing save and update again with any amount of characters. So I have no idea what’s causing this.

Bingo! I tried names over 5 characters, but they all had spaces in them (STREET 2, for example). STREET2, however, works.
So, 5+ characters, no spaces.
Thank you!

I remember having the same problem. How difficult would it have been to add a bit of code to tell you that?
"Ride Mode Name Cannot Include Spaces"
Annoying.

Hi,
I was also having this issue.
My "Custom" mode name was always 5-7 characters (w/o spaces).
One of the names was [CUSTOM] others were variations of my name.
With the help of Tech Support, a new mode named [test] worked.
Created it with everything set to 50% initially (except 100 for speed). It saved properly & remained editable/saveable).
Then after that, a new mode ["my name"] also worked.
The previous [CUSTOM] still didn't work, but is now deleted.
Perhaps the secret was;
Creating the name, with all lowercase (app changes it to caps later)?
or
Starting with 50% on everything (except 100 for speed)?
Very mysterious, but super happy to have it working now.
