What's the proper wiring for supplying the default charger with 250v?

Is it hot-hot-neutral or hot-hot-ground?

I think you will find neutral is grounded, so it makes no difference.

I know in newer homes, they run a separate  ground and neutral and you can tell such by looking at your 240 VAC drier outlet. If it's a 3-pin, your neutral is grounded anyway. If it's a four pin, it uses a separate ground and neutral. If that is the case, I would use the ground for the bike. The neutral is not needed for anything other than your 120 VAC. The neutral is simply the center-tap of your 240 VAC house transformer. 120 VAC on either hot to neutral. The bike doesn't need a neutral. Using a ground is considered safer. That's why the newer houses went to four pin outlets for 240 VAC. So there would be a ground even if the neutral goes open.

IOW, use the " hot-hot-ground" when you have no need for 120 VAC.

I can find precious little on how to do 250v wiring and found two competing wiring diagrams.

The idea of having a separate ground is so that with AC the neutral is constantly being energized so ground can be used to ground cases and keep there from being backwards loops.  But I'm not entirely sure with 250v.
